Among the many types of flour, a variety perhaps less known than the others is tapioca, which is obtained from the plant manioc. Naturally gluten-freerich in starch and withhigh calorific valueis used in the kitchen as a thickener or for the preparation of puddings and cakes.
A curiosity: tapioca flour also comes sold in pearl formobtained following a particular treatment, with which the famous one is prepared bubble tea. So let’s see how to use it in the kitchen: here are three recipes with tapioca flour.
1. Recipes with tapioca flour: beiju
One of the most popular recipes with tapioca flour is certainly beiju, la crepe as it is done in Brazil. Here we propose it with a sweet filling, based on banana and currants, but you can use whatever you like best. The ingredients I am:
- 500 g of tapioca flour
- 320 ml of water
- 1 banana
Place the water and tapioca flour in a bowl, cover with cling film and leave to rest for 12 hours. Then drain the water from the flour and leave dry the latter for at least an hour. Then remove the excess water spread some absorbent paper over the flour and leave it there for about twenty minutes. Once the time has passed, remove the paper, mix with a fork and then pass the flour through a sieve.
Then heat a non-stick pan well pour in the pasta, spreading it in a uniform layer of about 5 mm thick. Put a lid on and cook for a couple of minutes. Remove from the pan, let cool for a few minutes and serve with the currants and sliced banana.
2. Pudding with tapioca pearls
Among the recipes with tapioca flour, a pudding certainly cannot be missing. This is really special and delicious, because it is made with tapioca pearls, the same ones used in bubble tea. Let’s see the ingredients:
- 60 g tapioca pearls
- 400 ml coconut milk
- 2 tablespoons honeydew honey
- 1 teaspoon brown sugar
- 1 vanilla pod
Place the tapioca pearls soak in cold water for 15 minutes, then drain and rinse them several times under running water. In a saucepan bring to the boil the coconut milk, the sugar, the honey and the seeds of a vanilla bean, then maintain a gentle flame. Add the tapioca pearls and stir continuously for 5-7 minutes: the tapioca pearls will transparent, with a gelatinous appearance.
At this point, pour the mixture into the cups, let it cool to room temperature and then leave to rest in the refrigerator for about 1 hour. Take your pudding out of the fridge 10 minutes before serving it.
3. Recipes with tapioca flour: coconut sweets
Another particularly tasty recipe with tapioca flour is the coconut dessert, delicious and easy to make. The necessary ingredients are:
- 250 g of tapioca flour
- half a cup of sugar
- 1 teaspoon of salt
- 200ml coconut milk
- 1 fresh grated coconut
- half a can of condensed milk
- 500 ml of hot milk
- 1 tablespoon butter
Place the tapioca flour, coconut milk, sugar and salt in a bowl. Mix and then, little by little, add the milk and half the grated coconut, mixing until incorporated. Pour the mixture into a baking dish media and leave rest for about 2 hours. Then sprinkle the condensed milk and leave rest for another 30 minutes.
Fry the remaining butter and coconut in a non-stick pan until golden, then pour them immediately over the sweets in the baking dish: cut into cubes and serve.
